Christmas Baking in the PaulssonPaleo Household

 We have tried them all over the last few years... the paleo and LCHF recipes for Christmas goodies. We have really given it a good go and eaten our way through tasteless and dry baked goods. We have come to the conclusion that they just don't cut it. It seems that the Christmas recipes just do not work for us.

Sorry paleo-folks. All your recipes look amazing, they really do. And they make my mouth water as I scroll through my Instagram feed. But I have tried one recipe too many on the family.
So, what to do? At Christmas we have decided to compromise on homemade glutenfree baked goods. They clearly have more refined sugar than we would like, but at least we know what has gone into them. And yesterday afternoon, one little girl was very happy to help making the traditional Swedish pepparkakor (gingerbread), glutenfree version with organic corn flour. They taste like they should - amazing! We won't eat them all at once - we promise!!!

A Letter I Received - How Food Can Change Your Life...

I received the following letter from one of my clients.

It made me choke up! Here's the translation: 

"Good evening. Hope all is well with you. I have to share something with you... My father has for many years had high blood pressure, a lot of excess weight and is a diabetic on insulin... He has finally changed his diet.

On the 23rd of August he made up his mind and started eating according to paleo. The results came fast. He lost a lot of weight. Today he was at the doctor's - in 4 months he has decreased his insulin intake from 26 (extremely high) to 6 units. The doctor believes that my father can go off the insulin completely very soon. The doctor has rarely seen such an improvement. My father has been on insulin for many years. Thought I would share this with you. Isn't it fantastic. You were the start of this journey... Thank you for the inspiration. Big hug from A."

A few weeks ago, we finally made the trip to see our dear friends, Duncan and Linnea, who this summer made the big move and purchased a beautiful small holding in Devon. Ever since we met them in London a few years ago, they had been talking about owning a small piece of land, where they could grow their own vegetables, rear their own animals and live a more sustainable life. Now they have it!

We had a lovely weekend exploring the countryside and their new home. Half of the house was built in the 17th century and the other half in the 19th Century, it oozed history and was a beautiful maze of staircases, interlinking rooms and roaring fireplaces. It was a great place for the children to charge around and play hide-and-seek.

Both Duncan and Linnea have been avid followers of our exploits from the very beginning, so we were really interested to hear their plans and see what they intend to do whilst living in the Devon countryside.

Although, they only moved in June this year, they had already grown some of their own vegetables, harvested apples from their orchard and met locals who were willing to help out and pass on advice and life experience. Linnea has been on a bee course and intends to start her own colony next year to help with their planned wild flower meadow and to harvest some honey.

The following week, the diggers were arriving to install a ground source heat pump system, so that they could generate most of their heating from the ground. They also plan to install photovoltaics very soon, with the ambition to be off-grid one day. All very exciting stuff and we can't wait to go back for a bit of glamping next to their lake!
